French Country Chicken

An Open-faced sandwich to try!

Today is National Poultry Day…and here is a delicious chicken recipe for you. We chose to serve it as an open-faced sandwich, topped with the savory onion sauce…but this dish is great served as an entree, too!

French Country Chicken

Ingredients

  • 3 lbs sweet onions, sliced
  • 2 T. butter
  • 1 T. Extra Virgin Olive Oil
  • 1/2 cup red wine
  • 2 32 oz pkg/container Beef Broth
  • 1 t. freshly ground black pepper
  • 1 t. thyme, dried
  • 1/2 t. garlic powder
  • 3 bay leaves
  • 2 large boneless chicken breasts, pounded to 1/2-inch thickness
  • 2 T. Extra Virgin Olive Oil
  • spices: dash of salt, pepper, dried thyme, garlic powder
  • 4-5 T. cornstarch
  • 4-5 T. water
  • 3-4 thick slices of French bread, 1 – 1 1/2-inches thick
  • 3-4 slices of Swiss cheese
  • green onion, diced optional garnish

Instructions

  1. Turn Instant Pot to saute on HIGH; add 2 T. butter and 1 T. olive oil. Add sliced onions and saute until caramelized, stirring often to prevent burning.

  2. Once onions reach the caramelized stage, add red wine and allow to simmer for 5-8 minutes.

  3. Add in the 2 containers of beef broth, 1 t. black pepper, 1 t. dried thyme, 1/2 t. garlic powder and 3 bay leaves. Turn Instant Pot to LOW and allow ingredients to simmer for 10-12 minutes.

  4. While ingredients simmer, prepare the chicken (pound to 1/2-inch thickness). On stove top, saute the chicken in 2 T. olive oil over medium heat. Lightly season chicken with dash of the spices: salt, pepper, dried thyme, garlic powder. Brown chicken on both sides (about 3 – 4 minutes on each side).

  5. Once chicken is browned, add it to the Instant Pot and set to Pressure Cook on HIGH for 5 minutes. Allow to go through the Natural Release. Once Instant Pot has released steam, remove chicken to a platter.

  6. Make a slurry by combining the cornstarch and water; add to Instant Pot and saute on HIGH to allow sauce to thicken…can remove bay leaves at this point. Sauce should be slightly thickened within 3 – 5 minutes.

  7. While sauce thickens, butter the sliced bread and add a dash of garlic powder. Lightly broil and remove to a rimmed baking dish or oven-proof platter.

  8. To complete the sandwich: add cooked chicken pieces to the bread, spoon the thickened sauce over chicken and top with Swiss cheese. Broil in oven just until cheese begins to melt. Add garnish of diced green onion, if desired.
